I want to log time/position/water_depth as I boat around

I have a need to log position/depth as I boat around a lake (I produce
a map of that lake). Are there any depth sounders that either (A)
save NMEA data to a USB card, or (B) can output the data to a USB
device so that a laptop can capture the data (I'd need software, too)?

Ten years ago, my Garmin 185 worked with my laptop and HyperTerminal,
but the 182 has died, my laptop doesn't have a COM port, and
HyperTerminal doesn't come with Windows any more.

What's a navigator to do?

My Humminbird 597ci HD DI saves Lat/Lon and depth when I mark a waypoint.
I can then save the data to an SD card.
I can then manipulate the data with the my Humminbird PC software.
Seems to do what you are looking for.

I can't help with most of this, but if you need a terminal application,
PuTTY works very well:
