Garmin 310XT: How To Begin New Activity?

On a given day, I want to accumulate separate collections of
laps.

Tried hitting "Start"/"Stop", but it does not seem to work.

Tried turning the device off, then on a few times - but still no
joy.

Anybody know how to accumulate multiple "Activities" within a
single day?

Press & hold the 'Reset' to bring your times back to zero.

Your previous activity should go to history and will be transferred
next time you re connect.

If you don't hit the reset, it assumes your activity is part of the
previous one.
