Is it possible to leave the Garmin 2610 unit turned on in my car and
go about my travels then pull the card out and print a map of the
route I took?

The ONLY thing stored on the Compact flash card is the Detailed MAPS!
That's it! Everything else is stored In the 2610 built in memory. You
can leave the GPS on if you want as long as it's plugged into a Outlet that
doesn't switch off when you turn off your key. Then Remove the whole GPS
and plug that into the computer. I've heard that the track log isn't all
that large. I've never used that feature.

Yes in a roundabout way. As default, the Garmin saves the track of
where you've been. The catch is that it's only good for about 5 hours
or so. Beyond that, it will overwrite the oldest data. So you don't
want to leave the 2610 on all the time, only for the trip you want to
save and print.

The track data is stored in the 2610 internal data, not the Compact
Flash. What you need to do is via Mapsource, download the tracks info.
Your tracks will be displayed on Mapsource map. You can print these.
